How to make it

  • For Caramel:
  • Combine sugar and water, mix well. Over medium heat let the sugar be caramelized to light golden brown.
  • Immidiately pour into a round pan with at least 3" depth. Let it cool completely.
  • For Flan:
  • Combine all flan ingredients in a large mixing bowl and with a whisk, beat thoroughly but gently to prevent bubbles.
  • Strain while pouring in to the prepared pan lined with caramel.
  • Set aside and prepare cake.
  • For the Cake:
  • Blend the first 7 ingredients in a large mixing bowl and beat well until lump free.
  • In another mixing bowl, beat the egg whites until frothy, gradually add sugar while continuing beating until eggwhites are stiff but not dry.
  • Fold in eggwhites to the cake batter and pour into the prepared flan mixture. DO NOT TAP the pan.
  • Bake into pre-heated oven 350F by using "water bath" for 1 hour 20 minutes or until it doesn't wobble anymore. (I usually put tin foil on the cake to prevent from burning)
  • Cool completely before turning the cake upside down into a serving plate.
  Close

    This is an incredible looking recipe & one I will surely try out. I have a question for you though. In the list of ingredients for the cake you say '8 egg yolks', should that have been egg whites? cause the instructions say to beat the egg whites. Thanks & 5 forks

    Thanks - I love pancit and poto - by chance do you know where I can purchase tuba? Poto made with tuba is the only way to make it.

    Not to mention pan de leche.

    I am sure this is right up there.

    Recipe for Potu (rice cake) using Tuba:

    1 small bag of rice flour
    1 pkg. yeast
    1 cup beer ( If available use sweet tuba, instead of beer)
    1 cup sugar
    3 cups water

    1. Mix ingredients and beat with an electric beater
    2. Let mixture stand in a pan for 10 minutes to raise
    3. Put mixture in muffin tins and place in a pan with water in an over and bake in 350 degrees until cooked. An alternative is to place them in a steamer and steam for about 10 minutes.

    Phillipines sells and Guam, but they don't sell it on-line.

    Tuba is fermented Coconut milk. In the Phillipines they slow drip the coconut milk out of the coconut, and ferment it for some length of time - great drink to boot - boot legging (laughs).

    It's not the same (the poto), if it's not made with the tuba, so I don't bother.

    Sometimes when I don't feel like staying longer in the kitchen I use white cake mix for the cake part and just follow the direction of it, then proceed to the next step.
