How to make it

  • Grannies (WV) Fried Green Tomatoes
  • 1. Heat up your skillet and oil, hot but not smoking.
  • 2. Wash the tomatoes and slice ¼ - ½ inch thick.
  • 3. Dredge the tomatoes in the corn meal and place in the skillet.
  • 4. Fry 2 or 3 minutes a side until just done
  • 5. Drain and serve.
  • P’s Mom’s (MS) Fried Green Tomatoes
  • 1. Heat the butter in your skillet just med., don’t burn the butter.
  • 2. Wash the tomatoes and slice ¼ - ½ inch thick.
  • 3. Dip into the whipped egg and water and let drip well.
  • 4. Place in the skillet and cook 3 – 4 minutes per side. Don’t overcook.
  • 5. Drain and serve.
  • Use just enough butter to saute a batch of tomatoes and then add a bit more for the next batch. Do I need to say salt and fresh ground pepper to taste? Na.

    Mom was from West Virginia, we did the corn meal dipped version. Super Crispy, Tart in flavor and great side dish especially with a generous dash of hot sauce! Of course, Mom would tinker with the FGT and layer them with sharp white cheddar and slivers of cream cheese and sauteed mushrooms and chopped green onions and bake them as a pot luck casserole. She often sent her dolled up version as a funeral casserole for the bereaved. I tend to think of it as a Hillbilly version of eggplant parmesan.

    I have had similar and to each of these,they are very snappy,but Grandma always said,"a pinch of sugar never hurts."
