Reuben Baked Potatoes

- 4 large paking potatoes shopping list
- 2 c finely diced cooked corned beef shopping list
- 1 can sauerkraut(14 oz)rinsed,well drained and finely chopped shopping list
- 1/2 c shredded swiss cheese shopping list
- 3 Tbs sliced green onions shopping list
- 1 garlic clove,minced shopping list
- 1 Tbs prepared horseradish shopping list
- 1 tsp caraway seeds shopping list
- 1 pkg (3oz) cream cheese,softened shopping list
- 3 Tbs grated parmesan cheese shopping list
How to make it
- Bake potatoes at 425 for 45 mins. or till tender. Cool. In a bowl,combine the corned beef,sauerkraut,Swiss cheese,onions,garlic,horseradish and caraway. Cut potatoes in half lengthwise. Carefully scoop out potatoes,leaving shells intact.
- Mash potatoes with cream cheese;stir in corned beef mixture. Mound potato mixture into the shells. Sprinkle with parmesan cheese and paprika. Return to the oven for 25 mins or till heated through.
