How to make it

  • Place potatoes in a large mixing bowl.
  • Combine remaining ingredients in a heavy saucepan on medium heat stirring constantly.
  • When smooth and satiny in texture pour over potatoes coating them thoroughly.
  • Divide between 6 individual casseroles or custard cups.
  • Sprinkle top of each lightly with paprika and a bit of dry parsley flakes.
  • Place on a cookie sheet on the center rack of a 325 oven and bake uncovered for 40 minutes.
