Hubbys Peanut Chicken

- 2 lbs - skinless chicken breasts, cut in bite size pieces shopping list
- 1 - medium onion, chopped shopping list
- 2 cups – sour cream shopping list
- 4 cups - fresh baby spinach, washed and drained shopping list
- 6 - cloves garlic, chopped shopping list
- 2 - fresh jalapeno peppers, chopped shopping list
- 2 Tbsp - extra virgin olive oil shopping list
- 1/2 cup - roasted peanuts, chopped shopping list
- 1/2 cup - roasted peanuts, whole shopping list
- 1 Tbsp - fresh oregano, chopped shopping list
- 1 Tbsp - fresh basil, chopped shopping list
- 4 Tbsp - curry shopping list
- 2 Tbsp - red chili pepper flakes shopping list
- 1/4 tsp - ground turmeric shopping list
- 1 1/2 tsp - ground ginger shopping list
- 3 tsp - cayenne pepper shopping list
- 5 tsp - ground cumin shopping list
- 1 tsp - salt shopping list
- 2 tsp - lime juice shopping list
- Sugar or sugar substitute to taste shopping list
How to make it
- Heat a large skillet to medium-high.
- Sauté red peppers in olive oil.
- Add jalapenos, onion and garlic to peppers and cook until sweating and browning slightly.
- Add whole peanuts, chicken and remaining spices to pan and combine well. Cook chicken until most of the pink is gone.
- Add sour cream and ground peanuts. Start with one cup of sour cream and gradually add the second so as not to overflow the pan.
- Add spinach and stir into mixture until wilted.
- Add lime juice.
- Let mixture simmer for 10 minutes until sauce thickens and chicken is completely cooked.
- Add salt and sugar to taste.
- Serve over rice or along with mashed cauliflower.
