How to make it

  • MEATLOAF:
  • Melt butter in a skillet and throw in the onions and bell peppers; cook over medium heat until vegetables are crisp tender. Set aside.
  • In a large bowl, combine beaten eggs, milk, quick oats, salt, black pepper, dried savory leaves, and dried parsley. Add in the meats and cooked veggies and mix well with hands.
  • Line a 9x5x3-inch loaf pan with wax paper. Spoon the meat mixture into the pan and pack down. Cover and chill in the refrigerator for a couple of hours.
  • Preheat oven to 350F deg. Carefully turn meatloaf out into shallow baking pan, retaining shape as much as you can. Bake for 1 hour.
  • BISCUIT WRAP:
  • Meanwhile, mix together the dry ingredients for the crust. Add shredded cheese. Stir in buttermilk and vegetable oil, to form a dough ball. Chill until ready to use.
  • ASSEMBLY:
  • When meatloaf has baked for 1 hour, remove from oven while rolling out dough. Turn the oven temp up to 400F deg.
  • Turn dough out onto a floured board; knead a couple of times and pat out to about a 12x18-inch rectangle.
  • Carefully place the meatloaf topside down, lengthwise in the center of the rolled out dough. Bring the long sides together and seal, trimming as necessary. Bring the short sides down around the ends of the meatloaf, once again sealing and trimming to make it fit.
  • The trimmings can be kneaded together, rolled out, and have shapes cut out with cookie cutter and layed on top of wrapped meatloaf.
  • Place covered meatloaf, seamside down, in a greased shallow baking pan.
  • For the eggwash, add water to the beaten egg. Brush the pastry with the eggwash.
  • Bake at 400F deg for 15 to 20 minutes, or until meat thermometer reaches 160F deg - internal temperature, and biscuit crust is a golden brown.

    Yep, this will stick to your ribs and get you down the road with a big smile on your face. It also will not take you hours to make; that's nice. Only one question, what kind of sausage? There is mild and then there is mild.The first thing that comes to my mind is lean, smoked bacon. We all carry our own baggage in this arena. A great 5 post and thanks for sharing. RJ
