- Ingredients: shopping list
- 2 cups all-purpose flour shopping list
- ½ cup light brown sugar or Splenda Light brown sugar substitute or equivalent shopping list
- ½ tsp. baking powder shopping list
- ¾ tsp. baking soda shopping list
- ½ tsp. salt shopping list
- 2 tsp. cinnamon shopping list
- 2 tsp. ground ginger shopping list
- ½ tsp. ground cloves shopping list
- ¼ tsp nutmeg shopping list
- 1 cup pumpkin puree shopping list
- ½ cup buttermilk shopping list
- 1/3 cup 1% milk shopping list
- 2 Large eggs ( separated ) shopping list
- 6-oz 1/3 less fat cream cheese ( softened ) shopping list
- 4 Tbs. margarine melted shopping list
- 8 slices of bacon ( cooked and diced ) or 8 Tbs. bacon pits shopping list
- Non-stick cooking spray shopping list

How to make it
- Prepare Waffle Iron with non-stick cooking spray.
- In a large bowl mix together pumpkin, buttermilk, milk, egg yolks, melted margarine and softened cream cheese. Mix well; then stir in the bacon pieces. Set aside.
- In a small bowl beat egg whites until stiff peaks form.
- In another large bowl add the dry ingredients to the pumpkin mixture and stir to combine. The batter will be thick, but do not over mix. Gently fold in the egg whites until well combined.
- Baking: Follow the manufacturer's directions for heating the waffle iron.
- Spray the surface of the waffle iron with cooking spray for each of the waffles.
- For each of the waffles:
- Pour ½ cup of the mixture in the center of the waffle iron and cook until you don't see any more steam rising from the iron. Store the finished waffles on a wire rack in a warm oven so they won't get soggy while you finish cooking all the batter.
