How to make it

  • 1. In a mixing bowl mix the 1 Tbs salt with the 2 cups cold water.
  • 2. Peel, seed and cube the cucumber and put it in the salted water for 10 to 15 minutes, stirring two or three times.
  • 3. Cube the Yellow fin (or whatever fresh tuna you’re using) and put in a separate bowl.
  • 4. Add the lemon juice and fold a few times while your cucumbers are soaking.
  • 5. when your cucumber is soaked drain well.
  • 6. Add the rest of the ingredients to the fish and fold a few times leaving set for ten minutes or so.
  • 7. Add the cucumber and fold some more. This gets better if you let it set in the fridge for 30 minutes or so but that’s optional.
  • 8. Salt and pepper to taste and serve and enjoy.
  • Don’t know why some folks get excited about raw fish. When I lived in Hawaii the local guys would take a fresh caught fish, gut and head it, take off the skin, smear some soy and wasabi on it and eat off the bone. Personally I always cut it off the bone in strips and ate it that way but that’s because my mama taught me good manners.

    Who are you kidding Dugger? You already know that for cooking purposes 500g is 1 lb. Samoa is caught in transition between the British Imperial system, the US system and the metric system. Fortunately, the Brit system is 97% dead and the metric system is winning but there's still enough US junk around to get in the way. Metric is too easy.

    That scant and full works for me. I always just think scant is a tad short and full is generous.

    Thanks for checking out the dish. Glad to hear your lady will like it. Didn't really occur to me that tuna would be a problem. Any time you have fish raw it need to be as fresh as fresh and really good cuts to avoid a strong fishy smell & taste. Many things are hard to get here but fresh tuna and I mean Japanese "A" grade Sashimi tuna is what we are used to and it's cheaper than decent steak. Good luck with your search for good tuna and enjoy the tuna salad a natural. RJ

    This sounds like a recipe my wife will love. Cucumbers are one of her favorite things. I may have a little trouble finding fresh yellowfin here but it's worth a trip to the fishmonger.

    "Scant".. LOL. My father-in-law was a millworker. He was always using "scant" and "full" in his measurements. He once told me a "scant" was 1/32 inch short and "full" was 1/32 inch long.

    Now I have to go find my sliderule and convert grams to pounds.
