Stuffed Shrimp Red Peppers in Alfredo Sauce

- 8 large red peppers shopping list
- 4 cans of drained tiny shrimp or 1 lbs fresh chopped shopping list
- 1 Jar of alfredo sauce with mushrooms shopping list
- 1 large onion chopped shopping list
- 3 garlic cloves chopped shopping list
- 1 celery stalk chopped shopping list
- 1 red pepper chopped shopping list
- 1 stick of butter shopping list
- 1/2 bag of stuffing cubes (your choice of flavor) shopping list
- 2 cups of vegetable or chicken broth shopping list
- 1/4 cup white wine shopping list
- bread crumbs shopping list
- Seasoning: shopping list
- salt, pepper,to taste shopping list
- 2 tsp paprika shopping list
- 1 tbsp paprika shopping list
- 1 tbsp parmesan cheese shopping list
- 1 tbsp Old Bay Seasoning shopping list
- 1/2 pkg of Mozzerella shredded (6 oz total) shopping list
- 3 eggs shopping list
- 1 tbsp garlic powder shopping list
- 1 tbsp dill shopping list
How to make it
- Chop top off each pepper, clean out seeds and wash then drain
- In frying pan, saute butter with onion, garlic, pepper and celery until soft. Remove from heat
- In large bowl, mix stuffing cubes with broth and beaten eggs then add white wine
- Place saute veggies in bowl and mix well to be sure eggs do not cook.
- Add all other ingredients except bread crumbs and Alfredo sauce
- Mix well
- Add enough bread crumbs to hold together but not too firm
- Begin stuffing peppers and put in large baking dish that will hold 8
- peppers
- In another bowl, mix alfredo sauce with 1/2 jar of half-n-half
- Pour over peppers.
- Put tops back on peppers and season with salt, pepper & paprika
- Sprinkle Parmesan cheese over them with a little shredded mozzerella cheese
- Cover and bake at 325 for at least 2 hours or longer but not too long as to make peppers fall apart
