Tucson Meat Pie

- cornmeal crust: shopping list
- 3/4 c. flour shopping list
- 1/4 c. cornmeal shopping list
- 1/3 c. butter, room temp. shopping list
- Meat filling: shopping list
- 1 tblsp. oil shopping list
- 1 smallish white onion, chopped shopping list
- 2 cloves garlic, minced shopping list
- 1 lb. ground beef shopping list
- 8 oz. tomato sauce shopping list
- 2 tsp. chili powder shopping list
- 1/2 tsp. cumin shopping list
- 1 c. corn shopping list
- 3-4 tblsp. green chilies shopping list
- 1 1/2 c. cheddar or cojack, shredded shopping list
- salt and pepper to taste shopping list
How to make it
- Preheat oven to 425
- For crust:
- Mix 2 1/2 Tblsp. of the flour with 2 tblsp. water, set aside
- Place remaining flour in a large bowl, add cornmeal, cut in the butter until the mixture is coarse crumbs
- Stir in the flour paste
- Mix well to form a dough
- Roll out on a lightly floured surface, to fit a 9" pie plate
- Put in plate, prick all over bottom with a fork
- Bake for 5 min. or little less depending on your oven
- set aside
- Reset oven temp to 375
- Filling:
- Heat oil in a large skillet over med. heat, saute onion until soft
- stir in the garlic, careful not to burn it
- add the meat, lightly brown, then add tomato sauce, chili powder, cumin, corn, chilies, salt and pepper
- Stir and simmer gently about 5 minutes
- Fill the shell with meat mixture,
- Bake 25-30 minutes
- Sprinkle with cheese, return to oven 5 minutes more until cheese is melted
- Serve with black beans and rice, cucumbers with vinegar
