How to make it

  • Preheat oven to 425
  • For crust:
  • Mix 2 1/2 Tblsp. of the flour with 2 tblsp. water, set aside
  • Place remaining flour in a large bowl, add cornmeal, cut in the butter until the mixture is coarse crumbs
  • Stir in the flour paste
  • Mix well to form a dough
  • Roll out on a lightly floured surface, to fit a 9" pie plate
  • Put in plate, prick all over bottom with a fork
  • Bake for 5 min. or little less depending on your oven
  • set aside
  • Reset oven temp to 375
  • Filling:
  • Heat oil in a large skillet over med. heat, saute onion until soft
  • stir in the garlic, careful not to burn it
  • add the meat, lightly brown, then add tomato sauce, chili powder, cumin, corn, chilies, salt and pepper
  • Stir and simmer gently about 5 minutes
  • Fill the shell with meat mixture,
  • Bake 25-30 minutes
  • Sprinkle with cheese, return to oven 5 minutes more until cheese is melted
  • Serve with black beans and rice, cucumbers with vinegar
