How to make it

  • Cut the pork butt into 3 or four large pieces. In a bowl add orange juice a splash of water, and add diced garlic, bay leaf, peppercorns, oregano. Stab pork meat all over withk nife or bbq fork. Then add to bowl with orange juice mixture. Let marinade at least a couple hours..
  • Remove pork from mixture. place on paper towels so they arent soaking wet, but dont pat dry. Season well with salt. In a large deep saucepan, add lard until its about 1 inch high melted. IMPORTANT--- keep heat on medium low, but more towards low.( It needs to cook low and slow). Slowly add pork pieces. Cover and let simmer in fat. Every 30-40 mins turn meat so it doesnt burn on one side. It is done when all sides are nicely medium carmalized color. About 2 hours or more. Remove from heat and chop meat with butcher knife. serve as tacos on top of corn tortillas, with chile, lemon, and cilantro. or burritos! how ever u like!

    Thank-you for this wonderful sounding recipe.There is a very nice Mexican Restaurant here that serves Carnitas,but,I shall print this recipe off and give it to my daughter,so she may make it for her family.

    The recipe I use for this is very similar, they use orange wedges. It is a very nice addition. I love carnitas! I will give this a try. Also there great topped with nopales.

    Nice touch. Hope it doesn't ruin the taste but think I'll use olive oil instead of manteca. I really like the idea of the orange juice. This could marinate over night in the fridge. Great post. Thanks. RJ

    hmmm, orange juice..., I've cooked before with apple juice when cooking pork tenderloin or mixed with a brine... I have all those ingredients and will try this recipe this week. I'll let you know how it turns out. Thanks!!
