Beer Cheese Potato Chowder

- • 6 small potato (chunks) shopping list
- • 3 Cups chicken stock ( 3 cups potato water + 3tsp chicken bouillon) shopping list
- • 1/2 Cup Finely Chopped onion (sprinkled with water and cooked tender in microwave) shopping list
- • 1 Can, 12 oz, beer shopping list
- • 1-1/2 Cups Grated cheese (colby Jack) shopping list
- • cheese sauce (1/2 Cup whole milk & 3/4 " slice Velveeta cheese, microwave and stir until smooth. shopping list
- • 1/2 tsp Worcester Sauce shopping list
- • Pinch of white pepper shopping list
- • Thickening Agent (2 Tbls flour and 1/2 Cup skim milk mixed until smooth) shopping list
- • 3/4 Cup precooked chicken diced (optional) shopping list
How to make it
- In a 3quart Sauce Pan boil chunks of potato in water.
- Chop onion finely and place in a bowl with a sprinkle of water then cook in microwave until limp.
- Remove potato from the potato water when barely done.
- Add chicken bouillon to potato water and turn heat to medium high.
- Add Cheeses (grated and cheese sauce) and beer, stirring constantly.
- Add Worcester Sauce
- Add White Pepper
- Add thickening agent: Mix flour and skim milk until smooth and then gradually blend into main mixture.
- Cook over medium heat until mixture just begins to thicken.
- Add cooked diced chicken it you wish.
- Reduce heat and serve.
