How to make it

  • preheat oven to 350
  • Mix up your sugar cookie dough
  • add the coconut
  • chill if the dough is too sticky to handle
  • shape dough into 1 inch balls
  • place 2 in. apart on ungreased cookie sheets
  • make an indentation with your thumb in the middle of each cookie
  • spoon about 1/2 tsp. lemon filling into each indentation
  • bake for 10-13 minutes or until the edges are lightly browned
  • remove from cookie sheets immediately
  • cool 5 minutes on a rack
  • microwave the bark in a small microwave bowl on medium for 2 minutes, stir until smooth
  • drizzle over cookies
