Ricotta Cheesecake

- 1-1/2 lbs whole milk ricotta cheese,pureed in food processor shopping list
- 6 egg yolks shopping list
- 6 egg whites shopping list
- 1/4 c all purpose flour shopping list
- finely grated zest of 1 orange or 2 lemons shopping list
- 1/4 tsp salt shopping list
- 6 Tbs sugar shopping list
How to make it
- Preheat oven to 375 degrees.
- Generously butter and sugar 9" springform pan(3" deep)
- Whisk together ricotta cheese,egg yolks,flour,zest and salt in large bowl.
- In another bowl,whisk 6 egg whites with a mixer on low speed till foamy. Raise speed to high,and gradually add 6 Tbs. of sugar,whisking till stiff,glossy peaks form 3 to 4 mins. Gently fold a third of the whites into ricotta mixture using rubber spatula until just combined.
- Gently fold in remaining whites till just combined.
- Pour batter into pan and bake until center is firm and top a deep ,golden brown,about 1 hour.
- Let cool on wire rack for 10 mins. Run a knife around edge of cake;release sides to remove from pan and let cool completely.
