Cucumber Salad Recipe

How to make it

  • After slicing cucumbers, place in a bowl of water and let soak with 2 T. of vinegar. Let sit for aprox. 15 min. (to take the bite out of the cucumbers) Drain. place in large bowl and add rotel tomato's, onions and as much bacon ranch as you need to make it creamy. I use aprox. 1/2 bottle. add shredded cheese, mix well, refrigerate for aprox. an hr. and watch it disappear!

    I'm going to have to try a small batch of this. It seems like a bit too much acid with the tomatoes and the cucs. Maybe soaking the cucs in salty water for a while would lessen that. Interesting post. RJ

    Thanks for commenting on my recipe (well my sisters). Everytime I make this, it is gone within minutes.

    Babs, I use the 2 cup bag of cheddar cheese, so I guess you'd use about a cup, but its really to your own taste. I've even made it w/o the cheese and its just as good. Always nice to hear from you~

    Oh, this looks really interesting. Rotel AND bacon ranch dressing? Never heard of that combo before. How big a bag of shredded cheese (our store carries 2, 3, and 4 cup bags) and is it Cheddar?
