How to make it

  • Fry bacon in skillet until crisp.
  • Drain on paper towels; crumble.
  • To 1 tablespoon of drippings, add sugar and cornstarch.
  • Add vinegar, water, soy sauce, and pepper.
  • Cook until mixture boils and thickens, stirring constantly.
  • Set aside to let cool slightly.
  • Combine zucchini in a bowl with the crumbled bacon; season with salt then toss with the warm dressing.
  • Arrange on serving plates with sliced tomatoes.

    This sounds great. I think dahlka may have something. May add water and cornstart together then add to drippings. Will give it a go 'cause it does sound yummy!

    I made this last night! Delicious! One thing I changed was chopping the zucchini and cooking it. I had a problem with the dressing. I added the cornstarch at the time you indicated, and it turned the drippings into a solid mass before I had time to pour the vinegar in. Is that right? I think when I do it again, I will add the liquids, THEN the cornstarch...and maybe half the soy sauce. It was a delicious salad and my boyfriend and I agree...anything with bacon is always good! Thanks for the creative recipe!

    I've never tried hot bacon dressing over zucchini - interesting post and I would love to give it a try (how can ANYTHING with bacon in it be bad?!?) - thank you!
