Apple Butterscotch Pie

- 5 cups thinly sliced peeled tart apples shopping list
- 1 cup packed brown sugar shopping list
- 1/4 cup water shopping list
- 1 tablespoon lemon juice shopping list
- 1/4 cup all purpose flour shopping list
- 2 tablespoons granulated sugar shopping list
- 3/4 teaspoon salt shopping list
- 1 teaspoon vanilla shopping list
- 3 tablespoons butter shopping list
- Pastry for 9" pie shopping list
How to make it
- Preheat oven to 425.
- Mix apples, brown sugar, water and lemon juice in 2 quart saucepan.
- Heat to boiling then reduce heat and cover then simmer 8 minutes.
- Mix flour, granulated sugar and salt then stir into apple mixture.
- Cook stirring constantly until mixture thickens and boils.
- Boil and stir 1 minute then remove from heat and stir in vanilla and butter then cool.
- Turn apple mixture into pastry lined pie plate then cover with top crust that has slits cut in it.
- Seal and flute then cover edge with 3" strip of foil to prevent excessive browning.
- Bake 45 minutes removing foil during last 15 minutes of baking.
