How to make it

  • Preheat oven to 350
  • Combine flour, powdered sugar, cornstarch, and salt in a food processor, cover and process until combined.
  • Using the tip of a sharp knife, scrape out the seeds from the vanilla bean, discard pod or reserve for another use
  • Add vanilla seeds and butter to the flour mixture
  • cover, and process by pulsing several times until mixture starts to cling, stop once to scrape sides of the bowl
  • Form the mixture into a ball
  • Shape into 1 1/4 in. balls
  • place 2 in. apart on an ungreased cookie sheet
  • Bake about 12 minutes or until the edges start to brown
  • Transfer to a wire rack, cool about 5 minutes
  • place vanilla sugar in a small bowl, roll cookies in the sugar while they are still warm, the sugar will coat better when the cookies are warm.
  • to make vanilla sugar:
  • Bury a split vanilla bean in a container with 2 cups of sugar.
  • cover tightly and place in a cool dark place, allow to stand about 1 week.
