Potatoes O Brien

- 1/4 cup bacon dripping shopping list
- 2 1/2 lbs redskin potatoes, washed, UNpared and diced shopping list
- 1 sweet green bell pepper, medium dice shopping list
- 1 sweet red bell pepper, medium dice shopping list
- 3 medium yellow onions, medium dice shopping list
- salt and pepper to taste shopping list
How to make it
- Melt the dripping into a very large skillet over medium high heat. Add the remaining ingredients to the skillet, salting and peppering as you go.
- Allow the mixture to brown until crispy.
- When ready to turn, take a spatula and loosen the mixture around the edges. Use a platter larger in diameter than the skillet. Invert the platter over the pan and very carefully turn the mixture out onto the platter. Add a bit more dripping to the pan if necessary, then slide the potato mixture back into the pan with the browned side up. Now allow the underside to brown, as well.
