How to make it

  • Melt the dripping into a very large skillet over medium high heat. Add the remaining ingredients to the skillet, salting and peppering as you go.
  • Allow the mixture to brown until crispy.
  • When ready to turn, take a spatula and loosen the mixture around the edges. Use a platter larger in diameter than the skillet. Invert the platter over the pan and very carefully turn the mixture out onto the platter. Add a bit more dripping to the pan if necessary, then slide the potato mixture back into the pan with the browned side up. Now allow the underside to brown, as well.
