How to make it

  • Preheat oven to 375.
  • Heat large skillet over med-high heat,add oil. Sperinkle 1/4 tsp salt and 1/4 tsp pepper over chicken. Add chicken;cook 3 mins on each side. Arrange chicken in a 13x9" baking dish
  • Bake for 25 mins or till thermometer reads 165. Remove from oven;cover and let stand 15 mins.
  • Heat skillet over med-high heat. Add broth,juice and rosemary sprig. Bring to a boil,scraping pan to loosen browned bits ;reduce heat, and simmer 20 mins or till broth mixture measures 1/3 c. Doscard rosemary sprig;stir in remaining 1/4 ts salt and 1/4 tsp pepper. Serve sauce with chicken.
  • I double the sauce ingredients.

    This turned out very good and was so easy to prepare. I added mushrooms to the sauce and removed my boneless breast at a temp of 150. By the time I was ready to serve the meat temp was 165 and the meat was tender and juicy. A tasty dish that I will serve again.

    I loved it. Simple, tender and delicious. It was soooo juicy. The best result I've had with baked chicken. I kept the skin on. Will put fresh garlic under the skin while baking next time.

    Yup, I'm a big fan of chicken with rosemary. The lemon idea is large, and I thank you for sharing. It's similar to my contribution "Regal Rosemary Chicken" but I think yours is much healthier and far less fattening. Hi-5
