How to make it

  • From orange,grate 1-1/2 tsps. peel and squeeze 4 Tbs juice. From lemons,grate 1-1/2 tsp peel and squeeze 1/3c juice.
  • In med. bowl,combine 1 tsp of each peel and 1 Tbs orange juice with half of basil,1 Tbs olive oil,1/4 tsp salt and 1/4 tsp fresh ground black pepper.
  • With flat side of meat mallet,pound chicken breasts to an even 1/2" thickness. Add chicken to citrus mixture,turning to coat;set aside.
  • In small pitcher or bowl,combine sugar,1/8 tsp salt,1/8 tsp pepper and remaining citrus peels,citrus juice,basil and oil;set aside.(Can be made to this point up to 8 hours ahead. Cover chicken and citrus sauce and refrigerate).
  • Preheat large ridged grill pan or prepare outdoor grill for direct grilling on med-high.Add chicken to grill,cook 4 mins.Turn chicken over and cook 3 to 4 mins longer or till no longer pink in center.. Garnish with citrus slices.

    I made this dish a few nights ago, and it was great! I had to double the marinade amount, because I had very large chicken breasts. I cooked them on the grill, and the smell was wonderful. I did make a few adjustments to the sauce. I added capers, sundried tomatoes, chicken stock and cornstarch to make a pan sauce. The leftover chicken made a wonderful Chicken Caesar Salad the next night. Thanks for sharing this recipe!!!
