Ingredients

How to make it

  • SPRINKLE PORTIONED FISH WITH THE SALT AND LET IT STAND FOR 15 MINUTES.
  • RINSE THE FISH WELL AND PAT DRY WITH KITCHEN TOWEL.
  • SEASON THE FISH WITH THE SALT AND PEPPER AND FRY IN THE OIL UNTIL COOKED (ALTERNATIVELY YOU CAN BAKE THE FISH AT 180C FOR 15 MINUTES OR LONGER UNTIL COOKED - I PREFER BAKED).
  • DRAIN ON KITCHEN TOWEL AND SET ASIDE.
  • SWEAT THE ONIONS UNTIL SOFT AND ADD THE GARLIC AND GINGER.
  • FRY GENTLY FOR ANOTHER 2 MINUTES.
  • PLACE LAYERS OF FISH AND THE ONION MIXTURE IN LARGE JARS OR AIRTIGHT CONTAINERS.
  • HEAT THE DRY SPICES FOR ABOUT 2 MINUTES IN A LARGE DRY PAN UNTIL FRAGRANT.
  • ADD THE BAY LEAVES, VINEGAR, ORANGE JUICE, WATER, APRICOT JAM, SUGAR AND SULTANA RAISINS.
  • BOIL THE SAUCE FOR 10 MINUTES AND LET IT COOL DOWN SLIGHTLY.
  • POUR THE SAUCE OF THE FISH MIXTURE AND REFRIGERATE FOR 3 DAYS TO DEVELOP THE FLAVOURS BEFORE SERVING.
  • ENJOY

    We eat it on it's own or with rice, lentils keep it plain as the fish is spicy and full of flavour
