How to make it

  • Wafers:
  • Mix butter, cream and flour thoroughly. Chill for 1 hour. Roll 1/3 of the dough to 1/8 inch. Keep remaining dough chilled. Cut in 1" to 1 1/2" rounds. (I use an empty pill bottle) Coat both sides of the wafers with granulated sugar. Place on an ungreased cookie sheet. Prick each round with a fork about 4 times. Bake at 375° for 7 to 9 minutes or just until set but not brown. Cool. Put cookies together with creamy filling.
  • Creamy Filling:
  • Cream the butter, sugar and vanilla until smooth and fluffy. You can tint with food coloring if you desire. Place a small amount on each wafer and put wafers together to form a sandwich cookie.
