Low Carb Lasagna Recipe
I love my pastas and Italian food, but being on a diet that is one of the foods that they tell you not to have. Well I have found a way to have it by subsituting the noodles with eggplant. This is so delicious you would never know theres no noodles.

Ingredients
  • Meat Sauce
  • 1 1/2 lbs of ground sirloin or turkey breast or Italian sausage
  • 3 cloves of chopped garlic
  • 2 chopped onions
  • 2 tbspn of italian seasoning
  • 2 tbspn of olive oil
  • 1 tsbn of red pepper flakes
  • 1 (10 oz) package of frozen chopped spinach
  • 1 (28 oz) of can tomato sauce
  • 1 pkg sliced mushrooms
  • 1 chopped red pepper
  • 1 tspn of fennel seeds
  • 1 dash of salt
  • 1 (15 oz) can of diced tomatoes
  • 1 cu of red wine or vodka
  • 1 dash of pepper
  • Mock Noodles
  • 2 large eggplant, peeled,sliced lengthwise into ? inch noodle-like strips
  • 1 dash of pepper
  • cooking spray (olive oil spray is best)
  • 1 dash of salt
  • Cheese Mixture
  • 2 c of low-fat ricotta cheese
  • 3 c of shredded lowfat mozzarella cheese
  • 3 chopped green onions
  • 1/2 c of parmesan cheese
  • 2 eggs

Directions
  1. Spray cookie sheet, arrange eggplant slices and season with salt and pepper.
  2. Preheat your oven to 425 degrees.
  3. Cook those for 5 minutes on each side
  4. Lower oven temp to 375.
  5. Grab a skillet and brown meat, onion and garlic in olive oil for 5 minutes.
  6. Take the red pepper and mushrooms, and cook those for 5 minutes.
  7. No your going to add spinach, tomatoes, spices and wine and let that simmer for 5-10 minutes
  8. Blend ricotta, egg and onion mixture.
  9. in bottom of your 9” x 13” glass pan spread 1/3 of meat sauce .
  10. Then your going to start the to layer. Layer ½ eggplant slices, ½ ricotta, 1/3 mozzarella and parmesan.
  11. Repeat that step.
  12. Add your last layer of sauce, then mozzarella cheese and parmesan on top.
  13. Cover with foil and bake for 1 hour at 375 F
  14. Now remove the foil and allow the cheese to brown for about 5 minutes or so.
  15. When done let it sit fot 10 minutes or so.

I've been dieting since January and I am really anxious to try this recipe.

I made this tonight - it's in the oven right now! Can't wait to try it, as I'm on the South Beach diet and really wanted to do a dinner that wasn't just the old 'meat with a side of veggies' dish.


Just an update - we LOVED the lasagna. Even my husband did, and he was pretty sceptical of the eggplant-as-noodles substitution. We'll definitely make it again.

Can't wait to try this recipe. Husband is diabetic and loves eggplant.
