Shrimp with Green Sauce

- 6 Tbs extrsa virgin olive oil shopping list
- 5 cloves garlic,finely chopped shopping list
- 2 Tbs brandy shopping list
- 1/2 c dry white wine shopping list
- 1 c chopped fresh parsley shopping list
- kosher salt and fresh ground pepper shopping list
- 18 large shrimp,peeled and deveined,tails intact shopping list
- Warm baguette slices,for serving shopping list
How to make it
- Heat 2 Tbs oil in skillet over med. heat. Add the garlic and cook till it softens slightly,about 1 min. Add the brandy and swirl pan till alcahol evaporates. Add the wine and 1/4 c water and cook to reduce slightly,3 to 4 mins.
- Stir in the parsley,1/2 tsp salt and pepper to taste. Tranfer the mixture to a blender with 2 Tbs oil and puree till smooth.Cover and set aside.
- When ready to serve,heat remaining 2 Tbs oil in skillet over high heat. Add the shrimp;cook till just pink,1 to 2 mins.
- Add the green sauce,season with salt and pepper and warm through. Drizzle with olive oil or water to lossen sauce. Serve with bread.
