Oregano Olive Chicken

- 4 lbs chicken pieces(bone-in,your choice) shopping list
- 1/4 tsp pepper shopping list
- 2 Tbs olive oil shopping list
- 1/2 c white wine or reduced sodium chicken broth shopping list
- 1/2 c chopped pimiento-stuffed olives shopping list
- 1/4 c capers,drained shopping list
- 2 Tbs fresh minced oregano shopping list
- 1 Tbs minced fresh mint shopping list
- 1 Tbs cider vinegar shopping list
- 2 garlic cloves,minced shopping list
- 1 tsp minced fresh thyme shopping list
How to make it
- Sprinkle chicken with pepper. In a large nonstick skillet coated with cooking spray,brown chicken on all sides in oil. Remove and keep warm. Drain drippings form the skillet.
- Combine the remaining ingredients;pour into skillet,stirring to loosenbrowned bits. Bring to a boil
- Carefully return chicken to the pan. Reduce heat;cover and simmer for 20-25 mins or till juices run clear.
