Porcini Mushroom Burgers with Marinated Onions and Tomatoes

- BURGERS shopping list
- 1 ounce dried porcini mushromms (OR use 1/2 cup sauteed button mushrooms, chopped) shopping list
- 1 pound 97% lean ground beef shopping list
- 1 pound 80-85% lean ground beef shopping list
- (approximate - hard to buy in exact pounds lol) shopping list
- 1/2 c snipped fresh basil shopping list
- 1 t snipped fresh thyme shopping list
- 1 t fresh ground black pepper shopping list
- 1 1/2 t kosher salt shopping list
- 1 - 2 T garlic flavored oil shopping list
- 6 olive focaccia bread wedges, sliced horizontally (or your fave type bread/bun, or what you have on hand!) shopping list
- 1/2 c shredded Asiago (or mozzerella or italian blend) shopping list
- 1 recipe marinated onions and tomatoes (see below) shopping list
- MARINATED onions AND tomatoes shopping list
- 1 med Yellow or Red tomatoe, thinly sliced shopping list
- 1/2 red onion, thinly sliced shopping list
- 1 T white balsamic vinegar shopping list
- 1 T olive oil shopping list
- 1/4 t salt shopping list
- 1/4 t fresh ground black pepper shopping list
How to make it
- BURGERS
- *Make onions and tomatoes first*
- If using the dried porcini mushrooms, place them in a small bowl cover with boiling water and let soak 10 minutes. Drain and rinse, chop and set aside
- OR use chopped, sauteed button mushrooms, drained
- Preheat grill
- In a large bowl combine mushrooms, beef, basil, thyme, salt and pepper
- Mix together well
- Shape into 6 patties, about 3/4 inches thick
- Brush each lightly with garlic oil
- Set aside
- Place patties on grill, close lid if covered
- Grill about 4 - 5 minutes each side, until 160 internal temp
- Turn one time and don't mash them with the spatula (that gets all the juice out and makes them dry)
- IF the grill is uncovered it will take about twice as long to cook
- Allow the burgers to rest 10 minutes before serving
- Spirnkle each patty with cheese while they rest, to let it melt
- While they rest, toast bread on the grill
- MARINATED ONIONS AND TOMATOES
- In a medium bowl combine all ingredients.
- Cover and chill until serving
- PUT IT ALL TOGETHER
- Place each patty on the bottom half of the bread or bun top with onions and tomatoes

Next time I go on a burger binge, which has been known to happen, this is on the menu. A bit complicated for a quicky but great when one wants to create a "BURGER". Thanks for the post. RJ
