Chicken Summer Salad

- chicken Marinade: shopping list
- chicken (4 breasts) shopping list
- sesame oil (3 tbsp) shopping list
- garlic chopped (2) shopping list
- pepper, salt, ginger shopping list
- soy sauce (1/4 cup) shopping list
- olive oil (1/4 cup) shopping list
- Salad: shopping list
- Mix of lettuce for base (enough for 8 people) shopping list
- 1 cup pineapple tidbits drained shopping list
- 1 cup drained mandarin oranges shopping list
- 1 cup Cooked Basmati or jasmine rice shopping list
- 1 cup sliced snow peas shopping list
- 1 pepper chopped shopping list
- 1 container grape tomatoes shopping list
- scallions (4) sliced shopping list
- 1 small onion chopped shopping list
- cucumber (1) sliced shopping list
- 1/2 cup cranraisins shopping list
- chow mein noodles (1 small can) shopping list
- 1/2 cup slivered almonds (toasted) shopping list
- salt and pepper to taste shopping list
- optional: celery chopped shopping list

How to make it
- Chicken:
- Marinade overnight
- Grill chicken and cube when done
- Salad:
- Put lettuce in large bowl
- add all other ingredients except chow mein noodles) including chicken
- Pour about 1 to 1-1/2 cup of salad dressing over all and mix
- Chill for atleast 4 hours before serving
- Before serving, top with chow mein noodles
- Sprinkle sesame seeds over top if you like
- When serving:
- sides to add to salad:
- Blue cheese, marinated mushrooms, olives
- Note: lettuce may wilt a little, so do not put too much dressing on just enough to toss and flavor
- Serve Balance of Dressing when serving salad
