Baked Coq Au Vin Blanc Recipe

Ingredients
  • 4 boneless skinless chicken breast
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp flour
  • 2 tbsp butter divided
  • 2 tbsp olive oil
  • 1/2 tsp onion powder
  • 1/8 tsp garlic powder
  • 1/8 tsp lemon pepper
  • 1/8 tsp thyme
  • 4 oz can drained mushrooms
  • 4 oz pearl onions
  • 1/4 cup white wine
  • parsley
  • Options:
  • peas, carrots, any vegetable

Directions
  1. Season chicken on both sides with salt and pepper
  2. Drudge in flour and set aside
  3. Melt half of butter and olive oil in skillet over medium heat
  4. Add onion powder, garlic powder, thyme and lemon pepper with chicken to skillet
  5. Lightly brown both sides and remove to baking dish
  6. Melt remaining butter and 1 tbsp olive oil in skillet
  7. Saute mushrooms and onion till golden
  8. Add to baking dish
  9. Pour wine in skillet and deglaze scraping up any bits on bottom of pan
  10. Add to mushroom and chicken
  11. Bake covered at 350 for 60 minutes or till throughly cooked
  12. Add any option vegetable half way thru cooking and then continue cooking till done
  13. Sprinkle with parsley
  14. Serve over pasta or rice
