Baked Coq Au Vin Blanc

- 4 boneless skinless chicken breast shopping list
- 1/2 tsp salt shopping list
- 1/4 tsp pepper shopping list
- 2 tbsp flour shopping list
- 2 tbsp butter divided shopping list
- 2 tbsp olive oil shopping list
- 1/2 tsp onion powder shopping list
- 1/8 tsp garlic powder shopping list
- 1/8 tsp lemon pepper shopping list
- 1/8 tsp thyme shopping list
- 4 oz can drained mushrooms shopping list
- 4 oz pearl onions shopping list
- 1/4 cup white wine shopping list
- parsley shopping list
- Options: shopping list
- peas, carrots, any vegetable shopping list
How to make it
- Season chicken on both sides with salt and pepper
- Drudge in flour and set aside
- Melt half of butter and olive oil in skillet over medium heat
- Add onion powder, garlic powder, thyme and lemon pepper with chicken to skillet
- Lightly brown both sides and remove to baking dish
- Melt remaining butter and 1 tbsp olive oil in skillet
- Saute mushrooms and onion till golden
- Add to baking dish
- Pour wine in skillet and deglaze scraping up any bits on bottom of pan
- Add to mushroom and chicken
- Bake covered at 350 for 60 minutes or till throughly cooked
- Add any option vegetable half way thru cooking and then continue cooking till done
- Sprinkle with parsley
- Serve over pasta or rice

Very nice recipe. Prepared it last evening. The good thing is that it is also quickly and easily prepared. I served the dish with steamed green beans and new potatoes. Went well together.
