Apricot Nectar Cake

- 1 regular or moist yellow cake mix shopping list
- 3/4 cup corn or canola oil shopping list
- 1 cup "Apricot Nectar" available in grocery stores shopping list
- 4 eggs (separated) shopping list
- 1 Tablespoon lemon extract shopping list
- glaze ingredients: shopping list
- 2 cups confectioners sugar shopping list
- 1/2 cup orange juice shopping list
How to make it
- Cake:
- Beat all except egg whites well. Fold in well beaten egg whites. Pour into 1 floured bundt pan or 2 loaf pans and bake 40-45 minutes @ 350 degree F. Cool in pans (10-20 minutes for loaf and 25 for bundt pan). Remove from pan and cool top side up. Add glaze when completely cooled.
- Glaze:
- Mix 2 cups confectioners sugar with 1/2 cup orange juice. Boil until clear in sauce pan. Poke holes in top of cake with a utensil such as the handle end of a wooden spoon. Spread glaze on cool cake(s), allowing some to soak into cake and run down the sides. Ooey gooey.
