Strawberry Vinegarette

A light and flavorful dressing using fresh strawberries.
Ingredients
- 2 cups of strawberries (about 2 pints) shopping list
- 6 tablespoons fresh lemon juice shopping list
- 1/4 cup sugar shopping list
- 1/4 cup cider vinegar, or balsamic vinegar shopping list
- 1/4 cup olive oil shopping list
- salt and pepper shopping list
How to make it
- Using a food proceessor, puree strawberries until smooth.
- Add lemon juice and sugar, process until well combined.
- With machine running, gradually add the vinegar and oil in a steady stream.
- Process until blended, add salt and pepper to taste.
