Cherry Tomatoe Basil and Feta Salad

- 4 Cups of Red and Yellow cherry tomatoes, Halved shopping list
- 1/2 Cup od Minced scallions shopping list
- 1/2 Cup of fresh basil, Thinly Sliced shopping list
- 2 1/2 Tablespoons extra virgin olive oil shopping list
- 1 Tablespoon balsamic vinegar shopping list
- 1 clove of Fresh Crushed garlic shopping list
- kosher salt and Freshly ground black pepper to Taste shopping list
- 3/4 Cup Crumbled feta cheese shopping list
- 1 Tablespoon capers Drained shopping list
How to make it
- Put the Tomatoes, Scallions and Basil in a Large Bowl and Toss.
- In A Small Bowl, Whisk Together 2 Tablespoons of the Olive Oil, The Vinegar, Garlic and the Salt and Pepper to Taste. Pour Over The Tomatoe Mixture and Toss.
- Place the Tomatoe Mixture in a Shallow Serving Bowl or On A Platter. Top with the Crumbled feta Cheese and Sprinkle with the Capers.
- Drizzle with the Remaining Olive Oil and Add A Bit More of the Cracked Pepper If Desired and Serve.
- Note: This is A Beautiful Dish for A Wedding Reception!
