Ingredients

How to make it

  • Put the Tomatoes, Scallions and Basil in a Large Bowl and Toss.
  • In A Small Bowl, Whisk Together 2 Tablespoons of the Olive Oil, The Vinegar, Garlic and the Salt and Pepper to Taste. Pour Over The Tomatoe Mixture and Toss.
  • Place the Tomatoe Mixture in a Shallow Serving Bowl or On A Platter. Top with the Crumbled feta Cheese and Sprinkle with the Capers.
  • Drizzle with the Remaining Olive Oil and Add A Bit More of the Cracked Pepper If Desired and Serve.
  • Note: This is A Beautiful Dish for A Wedding Reception!

    Great salad for a hot day and every day is a hot day this time of year. I'll chuck in a few pitted kalamata olives, cause I'm strange, and this is a for sure. RJ
