How to make it

  • Bring first seven ingredients in a medium sauce pan to a boil then cover and reduce to simmer for 25 minutes.
  • Remove from heat; add butter and cheese, stir to melt.
  • Maybe try it next time with some sharp cheese or mozzerella added. Change up the spices some. Maybe add some garlic or ginger powder. If you are cooking for yourself, save a plate and eat it right out of the pot.

    This sounds very, very good, Points ;-) I happen to love the rice/cheese combination, and I just happen to have a chunk of summer sausage left in the freezer from the holidays which should cover what this recipe calls for. I even have a half bag of chopped broccoli that I might consider adding. Thanks for posting. I know this is from a while back, but you mentioned this morning in ODD as one of your fallbacks.

    Don't fret over the amount of liquid. It will all get adsorbed. I don't like soupy rice, that is unless I'm making rice soup. The chicken broth is ok to use, but there is so much flavor in this dish, there is no way you are going to taste the broth flavor. But if it blows your dress up, then be my guest.

    i like this.. unusual combination of ingredients here.. different, cranberries and cheese. seems like quite a bit of liquid.. and maybe i would substitute chicken broth for the water. usually like to make that substitution.

    usually don't like to add anything to a dish that doesn't add flavor. if you put it in you should be able to taste it, my belief.

    this is an idea that i favor. i eat alone at least once a week and usually make some kind of rice meal. sometimes only as simple as steamed beets over rice. love that one.
