How to make it

  • Combine coconut and milk.
  • Add vanilla and mix well.
  • Drop by teaspoon, 1 inch apart onto greased cookie sheet.
  • Bake in 350 * oven for 10 minutes or until delicately browned.
  • Remove from sheet at once.
  • Makes about 2 dozen cookies.

    Made these tonight as a dessert to a meal with Mal's Pendogs Pineapple Shrimp Packets and Kristopher's Red Snapper With Garlic And Lime and lime rice. I made them as directed, but I did use unsweetened coconut because we just like it better. I also did let them sit on the baking stone for a couple minutes before removing, and when I did, I sorta "turned under" the ends to make them a bit more round than when they came off the stone. :) I made a double batch and with the second half, I added lime juice rather than vanilla. Those were VERY good, too! Put de lime in de coconut, Ms. Kittens! ;) I added my pic. Thank you for the recipe.
