Pendog's Pineapple Shrimp Packets

- 6 canned pineapple slices, or 1 1/2 jars of pineapple chunks shopping list
- 1-1/2 pounds uncooked medium shrimp, peeled and deveined shopping list
- 1/3 cup chopped sweet red pepper shopping list
- 1/3 cup packed brown sugar shopping list
- 3 tablespoons butter, cubed shopping list
- 1 tablespoon seafood seasoning shopping list
How to make it
- Original recipe: For each foil packet, place a pineapple slice on a double thickness of heavy duty foil (about 12 in, square). Top with shrimp and red pepper. Combine the brown sugar and seafood seasoning; sprinkle over shrimp. Dot with butter. Fold foil all around the mixture and seal tightly.
- Grill, covered, over medium heat for ten to fifteen minutes or until shrimp turn pink. Open foil carefully to allow steam to escape.

- My Bastardization: I measured everything by eye and got 10 servings. Used pineapple chunks from a plastic jar because I didn't want the metallic, acidic taste to interfere with the flavor of this dish.
- I didn't have ready-made seafood seasoning, so I used chili and garlic powder, old bay seasoning, parsley, dill weed, lemon zest and freshly ground black pepper. You don't have to go to these lengths, but I will say the chili, garlic and old bay gave it a powerful, zesty kick you will love.
