How to make it

  • Original recipe: For each foil packet, place a pineapple slice on a double thickness of heavy duty foil (about 12 in, square). Top with shrimp and red pepper. Combine the brown sugar and seafood seasoning; sprinkle over shrimp. Dot with butter. Fold foil all around the mixture and seal tightly.
  • Grill, covered, over medium heat for ten to fifteen minutes or until shrimp turn pink. Open foil carefully to allow steam to escape.

  • My Bastardization: I measured everything by eye and got 10 servings. Used pineapple chunks from a plastic jar because I didn't want the metallic, acidic taste to interfere with the flavor of this dish.
  • I didn't have ready-made seafood seasoning, so I used chili and garlic powder, old bay seasoning, parsley, dill weed, lemon zest and freshly ground black pepper. You don't have to go to these lengths, but I will say the chili, garlic and old bay gave it a powerful, zesty kick you will love.

    Yo Mal: Lookin good. I love pineapple and seafood. You're right about canned pineapple. Haven't had that for about 20 years but I still remember that taste. We keep a dozen or so fresh pines growing around the place and I'll grab one of those for this dish. I was thinkin of making a seafood mix with this using shrimp, lobster and snapper in separate foil packets. Like your recipe for the seafood spice as well but don't use garlic powder cause it is a bit bitter. Fresh pineapple and fresh pressed garlic. This should all make a great flavor combo.     Okay, made these. Used fresh pineapple, chunked, and I used garlic, cayenne(a lot of it ;), Old Bay, parsley, dill, lime zest, salt, pepper, and a few cracked mustard seeds with the sugar. And I used butter. These were really good, and you are right....the scent when we opened them was wonderful! :) Thanks for the addition, Mal! (I added a few pics :)
