Summer Squash Casserole

great vegetable dish and quick to make dont have to heat up oven
Ingredients
- 2 1/2 lbs yellow squash sliced shopping list
- 3/4 cup chopped onion {green onions shopping list
- 1 cup reduced fat mayonaise shopping list
- 2 large eggs beaten shopping list
- 1 tbs. Flour {regular} shopping list
- 1/2 tsp, salt shopping list
- 1 { 10 oz, block sharp shredded cheddar cheese shopping list
- 1 cup soft bread crumbs shopping list
- 2 tbs. real butter melted shopping list
How to make it
- Combined Squash green onions in large micro wave bowl cover tightly with microwave safe top sush as plastic wrap fold back edge for steam to escape microwave 8 minutes or till squash tender do not drain
- Whisk together mayoniase and next 3 ingredients in large bowl stir in squash mixture and cheese spoon into lightly greased casserole dish 11x 7 inch cover tightly with plastic wrap fold back edge for steam to escape microwave 10 minutes
- Stir together bread crumbs and melted butter microwave 2 min sprinkle over casserole

Momo, I will have anew computer in a few weeks as I cannot do a lot of stuff on GR ( can't use mail, groups etc , can't rate etc) I love the recipe and made this before!!!! 5 from me even if it does not show up!
