Rainbow Salad With Lemon Poppyseed Dressing

- For Salad: shopping list
- 3 cups romaine lettuce, torn shopping list
- 1 cup English cucumber, chopped shopping list
- 2 scallions, chopped shopping list
- 1/2 cup yellow bell pepper, chopped shopping list
- 1/2 cup red bell pepper, chopped shopping list
- 1 large carrot, peeled and sliced thin diagonally shopping list
- 1 Granny Smith apple, cored and sliced thin shopping list
- 1 cup fresh blueberries shopping list
- 1/2 cup walnuts shopping list
- 2/3 cup feta cheese (I use a Mediteranean Herb flavord feta) shopping list
- For Dressing: shopping list
- 3 tbsp. apple cider vinegar shopping list
- 2 tbsp fresh lemon juice shopping list
- 2 tsp. dijon mustard shopping list
- 2 tsp. honey shopping list
- 1/2 tsp onion powder shopping list
- 1/4 tsp kosher salt shopping list
- 1/2 cup grapeseed oil shopping list
- 2 tbsp poppy seeds shopping list
How to make it
- Toss lettuce, cucumber, scallions, bell pepper and carrot together. Arrange apple slices ontop and sprinkle with blueberries, walnuts and feta cheese.
- To prepare dressing, whisk together vinegar, lemon juice, mustard, honey, onion powder and salt. Slowly drizzle in oil, whisking constantly, until combined. Stir in poppy seeds.
- Pour over salad and serve.
