How to make it

  • Preheat the oven to 350°F. Line cupcake pans with liners.
  • With an electric mixer at medium speed beat together the melted butter, pineapple juice, rum, and vanilla until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  • In a separate bowl combine the flour, sugar, baking powder, baking soda, and salt.
  • With the mixer on low speed, add the dry ingredients to the creamed mixture 1/2 cup at a time until combined. Fold in the pineapple and coconut.
  • Fill the cupcake liners three-quarters full. Bake for 20-25 minutes or until a toothpick inserted in the center of a cupcake comes out clean.

    Beautiful! Thanks! Wasn't sure if it was meringue or toasted coconut on frosting or even a coconut pineapple frosting....maybe I'll try that! Making cupcakes for a wedding and am checking out TONS of different recipes/ideas. This is definitely a contender!

    Crabhappychick - i use white cake frosting with coconut sprikle on top! the umbella was on a cool drinks i had once lol! but that the type of frosting i use was regular white (vanilla) cake frosting

    What are these frosted with? I'd like to make them just as they look...they are gorgeous and would make a special ending to a fun tropical barbecue on the deck with friends along with REAL pina coladas, of course! Please share the frosting, too! Thanks.
