How to make it

  • For the Burgers:
  • 1.) Get a large mixing bowl and tip the mince upside down into it. (Do it upside down as they often have a paper sheet that must be removed from the underside)
  • 2.) Break Up the slices of bread into breadcrumbs using a food processor. (Alternatively, I have before done it using my hands and a cheese grater in an emergency, and this worked surprisingly well giving a more chunky feel to the finished burgers, so if you don't have a food processor, you can still follow the recipe. )
  • 3.) Add the breadcrumbs to the mixing bowl.
  • 4.) Crack the egg into the bowl. (Make a small well for it with the breadcrumbs and it prevents it sliding all over.)
  • 5.)Finely dice the onion and add this to the mixing bowl.
  • 6.) Add a hefty splash of Lea and Perrins to give a strong flavor. At this point chili powder can be added to give spicy burgers as well as finely sliced red chili and pepper, or you can add cumin and fresh herbs for curry burgers which are also very popular with our family.
  • 7.) Add Salt and Pepper to flavor, though it really doesn't need much.
  • 8.)Have a plate covered with flour standing nearby to the mixing bowl.
  • 9.) Plunge your hands into the mixture and make sure that everything is really well mixed together before forming patties out of the mixture and transferring them onto the floured plate to get a slight coating of flour all over.
  • 10.) Cook the floured patties either by barbecue or grill until the juices run clear.
  • For the Sweetcorn Relish:
  • 1.) Add the sweetcorn to boiling water and cook. (Some canned sweetcorn is already cooked, so check this.)
  • 2.) Drain the sweetcorn thoroughly and put to one side.
  • 3.) Put peppers, vinegar, honey, onion and chili into a pan and bring to simmering point, boil for 15 minuted and then add sweetcorn.
  • 4.) Dissolve the cornflour in 1tbsp of vinegar and add this to the pan, simmer for a another 5 minutes.
  • 5.) Leave to cool, or add to sterilized jars if you're planning to keep it bottled.
