Chicken  A La King Or Pot Pie Recipe

Ingredients
  • 1/4 cup butter
  • 1 onion, minced
  • 1 green pepper, chopped small
  • 1/4 lb button mushrooms, sliced
  • 1/3 cup all-purpose flour
  • 1 cup chicken stock
  • 1 cup milk
  • 1 tsp EACH salt and pepper
  • 3 cups diced cooked chicken
  • 1 cup frozen or fresh peas
  • 1/4 cup diced pimiento (traditional but optional)

Directions
  1. Melt butter in a large saucepan. Add onion, green pepper and mushrooms. Cook 3 minutes until softened.
  2. Sprinkle with flour and cook 2 minutes.
  3. Whisk in chicken stock and milk. Bring to a boil; reduce to a simmer and cook for 5 minutes.
  4. Add seasonings, chicken and peas. Heat thoroughly. Stir in pimiento, if using.
  5. Taste and adjust seasoning to your liking and serve over rice, noodles, potatoes, homemade biscuits, toast points, etc.
  6. *Note: convert to a Chicken Pot Pie by placing the mixture into a large casserole dish. Top with either mashed potatoes, regular pastry or frozen (thawed per pkg directions) puff pastry, trimmed to fit. If using pastry, brush top with egg wash (1 egg beaten with 1 tsp water) and cut steam vents. Bake in a preheated 350F oven for 30 to 40 minutes or until browned and bubbling.
