Curried Crab Pitas

- 1/2 lb. mushrooms, chopped fine shopping list
- 1 onion, chopped fine shopping list
- 1 tsp. minced garlic shopping list
- 3/4 cup Miracle Whip or Mayo shopping list
- 2 tsp. curry powder shopping list
- 1 tsp. tarragon shopping list
- 1 pkg. fake crab (pollock) shopping list
- 3 tbsp. lemon juice shopping list
- 1 stalk celery, chopped fine shopping list
- 1/2 cup raisins shopping list
- 1 bag Mini whole wheat pitas shopping list
How to make it
- Saute mushrooms, onion and garlic together.
- Put mixture into a food processor and chop until well mixed.
- Add the crab and the celery and mix well.
- Transfer to a large bowl and add the Miracle Whip along with the curry and tarragon.
- Add the lemon juice and the raisins. Mix well.
- Make an incision in each mini pita pocket, about 1" long and stuff each pocket with about a heaping tbsp. of the crab mixture.
- Cut each pita pocket in half with the incision at the top.
- Arrange on a platter to serve. Refrigerate until serving.
- The flavour improves as it sits and it even tastes better the next day!
