Raspberry Creme Pie

- Crust: shopping list
- 1-1/2 cup crushed vanilla wafers (about 50-60) shopping list
- 1/4 cup melted butter shopping list
- Optional: 1/3 cup chopped pecans shopping list
- Filling: shopping list
- 1 pkg (8 oz) softened cream cheese shopping list
- 2/3 cup confectioners sugar shopping list
- 2-3 tbsp Peachtree Snupps shopping list
- 1 tsp vanilla extract shopping list
- 1 cup heavy cream whipped shopping list
- Topping: shopping list
- 1 cup sugar shopping list
- 3 tbsp cornstarch shopping list
- 3 tbsp water shopping list
- 2 pints of fresh raspberries (or frozen) shopping list
How to make it
- For crust:
- Combine wafer crumbs, butter & pecans. Press onto the bottom and up sides of a greased 9" pie plate.
- Filling:
- In large bowl, beat cream cheese, confectioners sugar, liquor and vanilla till light & fluffy. Fold in whipped cream. Spread into crust
- Topping:
- In bowl mix all ingredients. (if you think too thin, add more cornstarch and sugar)
- Spread over filling mixture. Cover and chill atleast 6 hours to have top thicken.
- To decorate: place fresh raspberries around the top of pie
- Note: try other berries: strawberries, cranberries, blueberries, rhubarb, blackberries or mix them up too.
