How to make it

  • The tricky part is that you have to remove the orange membranes - the absolute meanest thing my older cousin did to me when I was little.
  • I realized only last year the extremely easy way to do it:
  • Slice off the top and bottom of an orange so that it's flat on either end.
  • With a sharp knife, cut away the rind - including all the pith and the outer section membrane.
  • Slice orange in half then separate sections, removing membranes as you go.
  • Add sugar, a little less than you think you should, depending on how sweet the oranges are (that's why there's no measurement).
  • Add as much coconut as looks good to you - then add a little more.
  • Chill several hours.
  • Taste to see if it needs any more coconut or sugar.
  • Chill till ready to serve.
  • Ah, marvelluex! At once, you win new friends!

    This is the ambrosia I remember, plain and simple. At my grandmother's Christmas dinner this was served as an accompiment to fruit cake, a delightful contrast in texture, flavor and color.
