Ingredients

How to make it

  • Heat water and honey in small saucepan until it comes to a boil and simmer about 3 minutes, just to make sure it's fully incorporated.
  • In blender, pulse berries, lemon juice and rum until smooth.
  • At this point, if you'd like to strain it, do so then put back in blender.(I prefer it unstrained.)
  • Add honey water and pulse to blend.
  • Pour into plastic container with a lid and let chill at least a couple hours.
  • When chilled, add to ice cream maker and churn/chill per maker instructions.

    We really liked this. Since I dont have an ice cream maker I followed your suggestion to laurieg and used the "slush' method. It worked fine it came out like water ice. I used Malibu coconut rum . I think next time I will try it with Bacardi light rum. Thanks Keni for another great recipe.

    Thanks Keni, I will. I emailed it to myself. Just came back from Jamaica so have the RUM!! just need the berries. lol

    Hey Laurie! I think this would be okay using the "slush" method which is freeze, break it up with a spoon to disengage the ice crystals, freeze again, and so forth, until it's the consistency that you want. I haven't tried it, but it should work. The rum helps it not to freeze quite as solid, too, so don't lave it out, especially if you make it that way! ;)
