How to make it

  • Slice focaccia through the middle to create 2 round pizza bases. See Photo
  • Brush cut side of each side lightly with olive oil. See Photo
  • In medium skillet(I used a 12 inch cast iron which I then baked one of the pizzas in :), melt butter over low heat.
  • Add zucchini, then onion rings and let cook just about 5 minutes, until zucchini is beginning to get tender, and onions are softening. See Photo
  • Add wine, if using, and shrimp and cook about 3 minutes, tossing often, til they are just beginning to turn pink. See Photo
  • Turn off heat add tomatoes, salt and pepper, basil and garlic. Stir to combine.
  • Layer slices of mozzarella over olive oil side of each bread base. They don't have to cover completely, they will get melty :) See Photo
  • With slotted spoon, spread shrimp/tomato mixture over mozzarella See Photo. Reserve liquid.
  • Sprinkle with olives and red pepper, drizzle with reserved butter liquid and top with crumbled feta. See Photo
  • Bake at 425 for about 7-10 minutes until feta is browning, mozzarella is melted, and bases are crispy on the edges. See Photo
