Spanish Rice

- 1 med. chopped onion shopping list
- 1 med. chopped green pepper shopping list
- 3 cloves of finely chopped garlic shopping list
- 2 Tablespoon olive oil shopping list
- 1 Tablespoon butter shopping list
- 8 oz . of tomato sauce shopping list
- 1 1/2 teaspoon salt shopping list
- 2 Tablespoons parsley shopping list
- 2 teaspoons chili powder shopping list
- 2 cups long grain rice ( Basmati is what I use) shopping list
- 3 1/2 cups water shopping list
- Optional: shopping list
- 1 (12-16 oz. can) of beans- kidney or black beans shopping list
How to make it
- Rinse rice well with water in strainer and set aside to dry. Chop the garlic, pepper, and onion.
- Heat butter and oil over medium heat in sauce pan. Add the chopped garlic and lightly brown.Then add the chopped onion and pepper. Cook for 2-3 min. Add the tomato sauce, salt, and chili powder to pan. Then add the water and stir. Stir well then add the rice and parsley(Optional: add beans). Stir well. Bring to boil then turn burner to low and cover. Simmer for 30 min. Fluff with fork. Serve.
- Optional: Add some beans with the rice for some added heartiness. I like to add kidney or black beans, About 1 (12 oz) can is sufficient. Rinse beans well and then add it in when you add the rice.
