Pulav (vegetable Rice)

- oil – 3 tbsp shopping list
- ghee – 5 tbsp shopping list
- cinnamon – 2 sticks shopping list
- cloves – 6 to 8 shopping list
- cardamom – 3 shopping list
- Bay leaf - 2 shopping list
- star anise – 2 (Optional) shopping list
- onion – 3 medium size (chopped length wise) shopping list
- ginger garlic paste – 2 tbsp shopping list
- tomatoes – 3 medium size (finely chopped) shopping list
- Grind to fine paste shopping list
- Coriander leaves– 1 cup (1/2 bunch approx) shopping list
- mint leaves – ½ cup shopping list
- Green Chillies - 3 shopping list
- Assorted vegetables – 4 to 5 varieties (100gm each) shopping list
- Chopped carrot – 100gm shopping list
- Chopped beans – 100gm shopping list
- peas – 100gm shopping list
- Chopped potato – 100gm shopping list
- Chopped Paneer – 100gm (optional) shopping list
- garam masala – ½ tsp (optional) shopping list
- coriander powder – 1 tsp (optional) shopping list
- rice – 2 cup (500gm) (rice type - basmati rice optional) (soak it for 15 min) shopping list
- water – 5 cups (In case basmati rice is used – 4 cups of water) shopping list
- salt to taste shopping list
- Roasted cashews - 10 - 15 (optional) shopping list
How to make it
- Take a pan, put oil & ghee. Put cinnamon, cardamom, cloves, bay leaf, and star anise. Fry for 30 sec. Put onion. Fry it. Add Ginger garlic paste. Fry it. Add tomatoes. Fry it. Add the ground paste (coriander, Mint & green chilli). Fry it for 2 to 5 min (until you get the fine aroma). Add the chopped vegetables. Fry it 2 to 5 min. Sprinkle salt. Add Garam Masala & Coriander leaves. Mix well. Add Rice & Mix well. Stir for 2 min. Add water. Transfer the contents to a rice cooker and cook until done/ Transfer the contents to a large microwave safe bowl and cook for 25 min or until done/ Pressure cook for 2 whistles. Stir well before serving. Put Roasted cashews on top. Serve with Raita.
