Crispy Jalapeno Chicken With Tomato,corn Confetti

- For chicken: shopping list
- 2 TB honey shopping list
- 2 tsp fine chopped jalapeno pepper shopping list
- 1 large egg shopping list
- 3/4 c unseasoned dry bread crumbs shopping list
- 1/4 c flour shopping list
- 4 tsp Old Bay Seasoning shopping list
- 1 TB dried parsley flakes shopping list
- 6 boneless,skinless chicken breast halves shopping list
- 2 TB olive oil shopping list
- For Confetti: shopping list
- 3 plum tomatoes,seeded and chopped shopping list
- 1/2 c thawed frozen corn shopping list
- 1 green onion,thinly sliced shopping list
- 1 TB fresh lemon juice shopping list
- 1 tsp honey shopping list
- 1 tsp Old Bay Seasoning shopping list
- 1 tsp fine chopped jalapeno pepper shopping list
How to make it
- Chicken: In shallow bowl, combine honey,jalapeno pepper and egg. On seperate plate,mix bread crumbs,flour Old Bay and parsley. Dip each chicken breast in honey mixture. Coat evenly with bread-crumb mixture.
- Heat oil in large,non-stick skillet over med. heat. Cook chicken till cooked through 5 to 7 mins a side. Serve chicken with tomato-corn confetti and garnish with jalapeno slices ,if desired
- Confetti:In a med. bowl,combine tomatoes,corn,lemon juice,honey,Old Bay Seasoning and jalapeno,mixing well. Refrigerate till ready to serve.
