How to make it

  • Cream butter/sugar with an electric mixer until creamy
  • Add eggs, one at a time, beating well after each addition
  • In large bowl combine flour, baking powder, baking soda, salt
  • Combine buttermilk and orange juice in a measuring cup
  • Alternate adding flour mixture and buttermilk/orange juice mixture to creamed butter and sugar
  • Begin and end with flour mixture
  • After each addition, beat mixture on low speed until blended
  • Last, FOLD in blueberries.
  • Place paper baking cups in muffin pans
  • Add batter, filling 3/4 full
  • Bake at 350 degrees for 15-20 minutes
  • Remove muffin from pans immediately
  • Cool on wire racks

    The folding is the key in not crushing the berries,but some may like a bruised muffin...not me...gentle,gentle ~Smile~
    I like fruits of all kinds and this one would be nice to play around with.
