Pasta With Pepper Prawns

- 4 oz dry, whole-wheat linguine shopping list
- 2 cloves garlic, finely chopped shopping list
- 1 jalapeno pepper, seeded and minced shopping list
- 1 cherry pepper, seeded and minced shopping list
- 1/2 cup dry white wine shopping list
- zest of 2 limes shopping list
- juice of 1 lime shopping list
- 2 tbsp tomato paste shopping list
- 2 cups (1 pt) cherry tomatoes, halved shopping list
- 1/2 cup water (reserve from cooking pasta) shopping list
- 1 lb large shrimp, peeled and deveined shopping list
How to make it
- In a large pot of boiling, salted water, cook pasta until al dente, about 6-7 minutes. Drain, reserving 1/2-3/4 cup cooking liquid, and set aside.
- Cook garlic and chilli peppers in a small amount of non-stick spray in a non-stick skillet until fragrant and beginning to cook down.
- Add wine, lime zest, lime juice, and tomato paste, simmer for 1 minute.
- Stir in the cherry tomatoes and reserved pasta water. Cook 4 minutes longer.
- Add shrimp and cook just until the prawns turn pink.
- Stir in the cooked pasta to combine and serve.
